Everyone likes to schedule a summer get away, but what to pack? Always the age old question. If you can put it all in a small carry-on for a long weekend, your doing better than me. No matter how much I try to pack everything in that small carry-on, it usually requires my backpack as well. Here in New Mexico salsa and red chile lovers are called "pepper bellies" - we are connoisseurs of chile. New Mexico is a large producer of of this savory fruit, so the next time you buy a canned or bottled sauce check and see where the chile came from. Chile, in reference to food (not the country), refers to a capsicum pepper, specifically a spicy pepper and even more specifically, the green and red type chile peppers grown throughout New Mexico. Some Texas chili recipes use chili powder as the seasoning, while others use chiles with herbs and spices.
